1 mango, peeled and cut into wedges
1/2 English cucumber, thinly sliced
1 Tbsp grated lime zest
2 Tbsp lime juice, from 2 limes
2 Tbsp EVOO
1 Tbsp honey
1 Tbsp crushed red pepper
Arrange mango and cucumber on a plate. Whisk together lime zest, juice, oil, honey and red pepper. Drizzle dressing over salad, season with salt. This serves 4.
