This is one of those things that I wish didn't take as long to prep than it does to eat because I really love all the flavors that are involved, but when I do make them. Oh! Heaven. At least in my opinion.
Prosciutto Mango Skewers, Makes 20 skewers
10 slices prosciutto
10 balls mozzarella
20 mint leaves
Peel the mangos and cut into cubes, cut the mozzarella balls and slices of prosciutto in half. Wash mint leaves and pat dry. Take 20 toothpicks and add one piece of mango, 1/2 slice of prosciutto, 1 mint leaf and 1/2 mozzarella ball on each. Serve immediately. Enjoy!
